So I know I did horriable yesterday. We had a Star Wars marathon. we ate chips and dips and just spent the day on the couch. It was great.. Nice break from everything. 
Today I ate good. Never was able to get a work out in but I spent the day doing laundry and packing... 
Tomorrow will be alot of the same thing..

Feb 26th 2011

Going to keep this short and sweet. Ok so this morning I ate so bad.. But It did keep me full the rest of the day and for dinner I just had a salad and a sushi roll... I got in a hour work out tonight too. Did the biggest loser last chance, did the entire dvd.. Tomorrow we weigh in.. I am hoping for atleast a half of a pound since I know I didn't eat well or work out alot... Tomorrow we are having a star wars watching marathon. We are down to 4-6. Both my kids love them. 
Got a bunch of munchie stuff to munch on all day. Atleast I will have a well to work it all off.. I do plan on just eating a little of it. I'm not going to over indulged, well try not to..

Feb 25 2011

I am only in the end of my 3rd week of dieting and I am already losing my motivation to do it anymore. I just want to give up and say I am just going to be fat for the rest of my life and never be happy. I feel like I have no one to support me at home. My husband just eat what ever and wants me to eat it to. and when he makes something that smells and taste good its hard for me to resist. I wish he would get on board with me and help me out. My only supports are both 700 or more miles away.
I have been eating ok. I'm not eating as much as i was before and making better choices, like cooking with ground turkey or turkey sausage. Trying to cut out ground beef and pork sausage. Like tonights dinner I made spaghetti I used turkey sausage and whole grain pasta. It was actually pretty good. I served it with garlic bread and a Italian salad.
Guess thats all for now.. I need to just get in a better mood and get out of this funk.. :/

Ok so I got a work out in today. Got in a great walk this afternoon. But I just had to screw it up with dinner :/ We had to do some running around about dinner time, I was planning on making dinner at home. But our car decided it wanted to run out of gas even though the gage said there was still gas in it. By the time we got gas back into the car and a running around done it was 7pm. So we went to this new place that opened up her called Wheat State Pizza. Very good. But I over ate and had pop. I had a calzone with chicken, onion and green bell peppers on wheat dough, very good. My husband and I did share a house salad. But I just ate way to much.. Going to need to work even harder tomorrow to burn off this dinner.. Other than over eating for dinner the rest of the day was good atleast.

Feb. 22nd 2011

Well today got started off in the wrong way. I totally forgot about an appointment I had this morning, until this morning. Oops. Still made it there on time, thankfully. So I wasn't able to get my work out in this morning. But I ate good today and I got in a good hour walk, half of it was up hill. I stayed under 1200 calories with eating and burned off just over 900.
I am starting to notice that I am getting fuller faster. I'm not eating as much. Breakfast and lunch are easy to do with those frozen lean pockets and Jimmy Dean turkey and ham sandwiches and all those healthy choice meals for lunches. Dinners are harder to do with watching calories. I need to find a website or a cook book with all healthy recipe's. I can find some here and there but I have to look on like 10 different web pages. Would be nice to have them all in one thing.
My husband has been doing work at the Extreme Makeover House going up in Wichita Kansas. I haven't seen him much these last few days. Sometimes when he is not here with dinner I eat less. But other times I eat more. You would think it would be one or the other. Guess I might have to do with how the rest of the day went.
I just can't wait to move so or friend can finally not be living with us and I don't have to make so much food. Be able to buy like fish and stuff with out having to feed him too. He eats enough for 2 people. He has just got to go. Come on and hurry up and call and let me know we got the apartment or not, getting tired of waiting.

Cabbage Casserole


Ingredients

  • 1 large head cabbage, shredded (about 12 cups)
  • 1 onion, chopped
  • 6 tablespoons butter, divided
  • 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
  • 8 ounces process cheese (Velveeta), cubed
  • Salt and pepper to taste
  • 1/4 cup dry bread crumbs

Directions

  • Cook cabbage in boiling water until tender; drain thoroughly. In a large skillet, saute onion in 5 tablespoons butter until tender. Stir in soup. Add cheese; stir until melted. Remove from the heat. Stir in the cabbage, salt and pepper.
  • Transfer to an ungreased 2-qt. baking dish. In a small skillet, melt remaining butter. Cook and stir crumbs in butter until lightly browned; sprinkle over casserole.
  • Bake, uncovered, at 350° for 20 to 30 minutes or until heated through. Yield: 6-8 servings.

Nutrition Facts: 1 serving (1 cup) equals 259 calories, 18 g fat (10 g saturated fat), 43 mg cholesterol, 749 mg sodium, 18 g carbohydrate, 4 g fiber, 9 g protein.
You can make it with 2% Velveeta too. I just had the regular one to use up.

Feb. 21st 2011

So the start of my 3rd week of attempting to lose weight went fairly good. Yesterday went much better though. But I did stay in my calorie range. I just need to work on lowering fat intake and salt intake. Those 2 I seem to always be over on, normally not by much. My goal is to stay around 1500 calories. Today was 1,436 calories. Not to bad I guess.
I been craving pop alot these last few days. I used to never drink pop then started up again. I hate that I did. We can buy a 2 litter and it will last a week. I would only have one 8 oz glass a day. That was a few weeks ago. A few years ago I would drink a 2 litter a day. Yesterday I did have a Pepsi Max since there is no calories. I know its still not good for you but it helped with that craving. Think I am going to try the carbonated flavored waters. Its still just water just carbonated so it will be like drinking a pop. There are just days I just don't want water.
I did the Biggest Loser Last Chance DVD today. It still kicked my butt. But today I was able to keep up and only had to stop once for water. Not to bad. Its a great work out. I am always drenched with sweat by the end. I also did alot of going up and down stairs doing laundry and going through stuff today. I'm just glad my legs don't feel like jell-o any more :)
So I have 6 different work out DVD's. I have 3 Biggest loser, a cardio max, power sculpt, and the last chance. I have the Julian Michaels 30 day shred. A Denise Austin Fat burning. And a core one, which works mainly the core. I think I might alternate weeks with them. Like this week for 5-6 days I will do the Last chance work out. Next week do the Shred, following week do the cardio and sculpt then do the Denise Austin one. Core one I'm not going to worry about until I lose much more weight. Figured by alternating them it will help keep me from getting bored with just one. It sounds good. We shall see how well it works out.

Feb. 20th 2011

Well today was the magic weigh in day. Lets just say I was not to happy. I gained .8 pounds. Guess I need to work out even harder and eat even less... I thought I was doing pretty good. :/
I did manage to make it to the store today. Since all the bad food is gone I was able to buy healthier stuff. So next weekend I'm hoping for a even more of a loss. Hoping for 2 pounds.
When I added up everything I ate today I was shocked to see that I only ate 882 calories. I don't even feel hungry. Thats a good thing right?
I found a new love today. The Boca veggie burger, only 80 calories for one and actually tasted good. Its what I had for dinner on top of 1 slice of toast with sweet hot mustard and weight watcher cheese (45 calories for a slice), along with the Banquet cheesy beef and macaroni. Dinner alone was 461 calories..
I think I have to become calorie counting obsessive person to make this whole weight lose thing work out. We shall see how crazy it makes me..
My next goal to making sure I drink enough water and getting enough sleep.. Both are helpful.. don't have much else to say. So until next time, eat healthy...

Feb 19th 2011

So I know I have not been on here in a few day. I have been busy with getting stuff organized. I guess you can say I hit spring fever lol. I still been eating better than I was. Thats been a slow transition.
I have worked out just about everyday. Yesterday I walked my kids to the park, 1/2 mile total. The 3 of us played for 2 hours. Its crazy how we went from record lows and blizzards to record highs the following week. I have been doing a combo of the Julian Michaels 30 day shred along with the Biggest Loser Last Chance work out. Plus cleaning and downsizing stuff getting ready to move its been crazy around here.
At some point I need to bring in a play house from outside so I can get it cleaned so we can use it indoors once we move. Thats going to be a work out in its self. Maybe I'll save that for tomorrow. Unless I decided to do it today. Hmmm..
Things have been pretty stressful around here lately. We have had a friend staying here and he was only suppose to be here a few days and its been about 2 months now. He has yet to pay us anything or chip in for food. All he does is complain about how hard it is out there and stuff he has to pay.. I just laugh. He has no idea. He has no kids, he's not married he doesn't have rent to worry about or bills to pay or a family to support. He has nothing to worry about. I always tell him put your self in our shoes then you can complain. Thankfully once we move he is not staying with us and we are going to make him help us move. No matter how many times we hint to him that we didn't want him to stay here this long he has yet to leave. Its pretty sad when you have to hide foods and drinks just so he doesn't drink and eat it all..
Dinner Tonight will be a Subway veggie delight on the flat bread.. Going to weigh in tomorrow. Hoping for atleast a pound. I'm going to take measurements too. Figured I better since I haven't yet..
I need to get out of this funk I am in. I just have not wanting to do much. Maybe after our move I can get into a better routine.. Have a good Saturday night..

Feb. 15th 2011

How was everyone's Valentine's. Our was pretty eventful. Finally after almost a year my husband got his truck running. But it died out due to something else being wrong. We just stayed home and watched a movie. It was relaxing.
I never got in a work out in today. But with all the running around we did I got alot of walking in. So I guess thats something.. Better than sitting around doing nothing..
We finally found a place we are going to move into. Going to get it started tomorrow. I'm am getting very excited and stressed all at the same time..
I got my Valentine's present today. My hubby got me the 30 day shred by Julian Michaels and the Biggest Loser Last Chance Workout.. Going to get my workout on tomorrow.
So I decided to make a goal list. It was kinda hard to think of a reward for the pounds I lost. I never thought it would be hard.. I'm going to have it posted over on the side..
Well Tomorrow is going to yet another busy day. Good night ya'll...

Summer Garden Couscous Salad

Summer Garden Couscous Salad Recipe

Ingredients

  • 3 medium ears sweet corn, husks removed
  • 1 cup reduced-sodium chicken broth or vegetable broth
  • 1 cup uncooked couscous
  • 1 medium cucumber, halved and sliced
  • 1-1/2 cups cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped red onion
  • 3 tablespoons minced fresh parsley
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Directions

  • Place corn in a Dutch oven; cover with water. Bring to a boil; cover and cook for 6-9 minutes or until tender. Meanwhile, in a small saucepan, bring broth to a boil. Stir in couscous. Remove from the heat; cover and let stand for 5-10 minutes or until water is absorbed. Fluff with a fork and set aside to cool slightly.
  • In a large bowl, combine the cucumber, tomatoes, cheese, onion and parsley. Drain corn and immediately place in ice water. Drain and pat dry; cut the kernels from the cobs. Add to cucumber mixture. Stir in couscous.
  • In a small bowl, whisk the oil, lemon juice and seasonings. Pour over couscous mixture; toss to coat. Serve immediately or cover and refrigerate until chilled. Yield: 9 servings.

Nutrition Facts: 3/4 cup equals 171 calories, 6 g fat (1 g saturated fat), 3 mg cholesterol, 265 mg sodium, 25 g carbohydrate, 3 g fiber, 6 g protein. Diabetic Exchanges: 1-1/2 starch, 1 fat.

So its the night before Valentine's. We don't really have plans for tomorrow. Just going to stay in with the family. Can't afford to go out right now. But we will when we can.
To day I weighed in. Lost 1.4 pounds this week. HAPPY DANCE :).. That was a great start to the day..
For breakfast today I made a breakfast pizza. So good.. Ate more than I should of. But I didn't eat lunch since I wasn't hungry. Dinner was roasted marinaded chicken breast, a summer couscous salad (will post recipe tomorrow) and some bread sticks.. My husband could not stop saying how good dinner was. So I guess That means dinner was good :)
Once again this morning I got burned by the oven. This time it was by my elbow. Went to take the pizza out of the oven and my elbow hit the oven door.. Got a nice burn from that.. Same arm as yesterday too, go figure... Guess I better stay away from the oven for a few days....
today was a pretty productive day. Got my daughters stuff done for her Valentine party at school tomorrow. She made a box and signed all the cards I just put the cards together since it got late. My husband and I got the garage cleaned out and I finished shoveling snow from the front of out house and drive way.. But those where mt work outs for today since I never got around to doing a video.. But will be in the morning..

Feb. 12 2011

Over all today wasn't a bad day. It was hard since my husband was at work and my kids where both acting like crazy animals who ate a pound of sugar. But thats what ya get when you have a 5 year old and a 3 year old.
Turns out we did get the apartment. We can move in on the 1st. But if we do we would have to find our dog a new home. They only allow pets in certain buildings and the apartment we looked at isn't in one of those. We have had out dog for almost 3 years. He will be 7 here in about a week. I can't just give him up like that. He is like one of my kids, like my 1st born. I already had to give up my other dog, a boxer who I still miss, because we couldn't afford to buy a 50 pound bag of dog food a week any more. But atleast I know he is in a good home and I can see him when ever I want. I am still heart broken over that. I will be devastated if I have to go through that again. But we need to get out of this house as soon as possible. I don't know what to do.. The apartment is nice and its what we need, plus access to a gym when ever I want. I am hoping my husband brother will take care of him until we get back on our feet. But if he can't, I just don't know what else to do..
On another sour note I burned my had taking dinner out of the oven. Got a nice little blister on my thumb now.. Hurts..
 On a better note I did get in a hour work out this morning. Did the Biggest loser cardio max and power sculpt dvd, both level 1, 20 mins work out each plus 2 5 min warm up and 2 5 mind cool downs. Both my kids worked out with me for a little this morning. It was nice to have the company and funny to watch. But they did pretty good with keeping up. According to the Everyday Health website I have burned off 1,260 calories over the course of everything today and ate 1,544. So thats not bad.. Tomorrow I weigh in. Hope for atleast a pound lost..

Feb 11th 2011

Today has been a very long day. Both my kids have been trying my patience and they are just about out. All over toys at that. Why is it so hard for kids to pick up.. They drag them out then don't play with them. But when I tell them to pick up they decide to play. Its a battle I go through every night and I'm about to just take all their toys away.
My son, who is 3, wants to eat all day long. Every 5 mins he is asking for a snack or dinner or lunch. When I tell him no he throws a fit. Its getting old and fast. He does it every day all day no matter what we are doing.
Tomorrow after noon we find out if we are moving.. I hope we got the apartment. We need it..
I did manage to get in a good work out this morning. Did a Billy Blanks tae-bo flex. Its was about 45 mins long. I worked up a good sweat. Was able to get it for free from Family Video. They have a free educational section and they have some work out dvd's. So I'll be checking those out.
For breakfast today I made 2 eggs, one whole and one just the whites. Wrapped them in a tortilla with a little cheese and some hot sauce, actually hit the spot. Lunch I had another Banquet meal, the boneless pork ribs. Dinner I made the Nutty Chicken Stir Fry that I posted. I got it from the newest taste of homes magazine. I also shared a banana with my son for a snack. I thought I ate pretty good. Physically I feel fine minus my legs being a little sore but mentally I am drained..
So here is to a better tomorrow. It will be Saturday and we go back to see the manager for an apartment and find out if we got the one we looked at and then I will know if I need to pack.. Have a happy Friday night...

Nutty Chicken Stir Fry


Ingredients

  • 1 pound boneless skinless chicken breasts, chopped
  • 1 tablespoon canola oil
  • 1 package (16 ounces) frozen stir-fry vegetable blend
  • 6 garlic cloves, minced
  • 2 tablespoons brown sugar
  • 4 teaspoons cornstarch
  • 3/4 teaspoon ground ginger
  • 1/2 cup chicken broth
  • 1/3 cup reduced-sodium soy sauce
  • 1/4 cup chunky peanut butter
  • 5 to 6 drops hot pepper sauce
  • 3 cups shredded cabbage
  • 3/4 cup salted peanuts, chopped
  • Hot cooked rice

Directions

  • In a large skillet or wok, stir-fry chicken in oil for 2 minutes. Add vegetables; cook 4 minutes longer. Add garlic; stir-fry until chicken is no longer pink and vegetables are crisp-tender.
  • In a small bowl, combine the brown sugar, cornstarch and ginger; stir in the broth, soy sauce, peanut butter and pepper sauce until blended. Pour over chicken mixture.
  • Bring to a boil; cook and stir for 2 minutes or until thickened. Add cabbage; cook 2 minutes longer or until crisp-tender. Sprinkle with peanuts. Serve with rice. Yield: 5 servings.

Nutrition Facts: 1-1/4 cups (calculated without rice) equals 434 calories, 22 g fat (3 g saturated fat), 51 mg cholesterol, 991 mg sodium, 31 g carbohydrate, 7 g fiber, 31 g protein.

New start.

 Ok so it has been almost a year since I been on here. I hate to admit it but I have not been working out. All that I did lose I have gained it all back. I hate myself for doing that to. So now I'm going to get back into the swing of things and get this weight off of me finally.
Lately my family has been having some hard times. Work has slowed for my husband and I have had no luck finding a job. Money has been tight so I have not been able to get to the gym. stress has been a factor in my weight gain. I am going to do my best to eliminate as much of it as I can.
We are moving soon and to the place we hope we got has a free gym to use with everything in it. So that right there is more reason why I can work out. So until then I will be doing my video's.
I plan on working out every day I can and eating better. Instead of ground beef going to get ground turkey or ground chicken. Instead of pork sausage going to get turkey sausage (which is actually really good, even in sausage gravy). Going to eat more of the good stuff, cut out pop and junk food. Eat dried fruit instead of chips.
So here it begins. I did try to work out today until I had to leave and pay a bill so atleast I got in about a 10 min work out. For breakfast I had a bowl of cinnamon cheerios with milk. Lunch I had a Lean Pocket -pizzeria supreme. Dinner I made lasagna (only had one serving), a cesar salad and garlic bread (only one piece). I did had a Pepsi with dinner. But I was needing the caffeine for my headache since I had no coffee this morning. First pop I had in a few days though, so thats good, right?
One of the websites I use to keep track of everything is www.everydayhealth.com.. Great website. You can keep track of all the calories you eat and burn off. There are recipes, going to start trying some out. Even look up health issues.

As I go along and find good recipes I will post them on here and on my other blog too.
